@catsynth 1) bring a *lot* of milk to a boil over low/med heat

2) stir continuously to avoid burning milk at bottom of pan
@catsynth Watch out as when milk boils it can suddenly double up and overflow!
@catsynth 3) once it boils remove from heat

4) stir in juice of 1-3 lemons. It should start curdling.

5) let sit for 10-15 minutes
@catsynth If it hasn’t curdled, add a bit more lemon juice until it does.

@catsynth 6) drain into a cheesecloth, then twist up the cloth and lightly squeeze to get a lot of water out

@catsynth Don’t overdo it as you don’t want to push curds through cloth.
@catsynth 7) place the cheesecloth-wrapped curds between two dinner plates and put a stack of books on top
@catsynth 8) let it sit and compress for a few hours
@catsynth You’ll have to drain water from the plates every 10 minutes or so.
@catsynth 9) After water stops appearing you are pretty much done. Unwrap and cut into cubes.
